So as I try and make the recipe list more condensed here are a few of my favorites!
Breakfast
Eggs & Cottage Cheese
- 2 eggs
- 1/2 cup 1% reduced fat cottage cheese
- oil/butter for pan
- salt and pepper for taste
- Melt butter in pan on medium heat
- Combine eggs and cottage cheese in a bowl until clumps of cottage cheese are mostly gone
- Pour eggs and cottage cheese mixture into pan
- Add salt and pepper
- Cook for about 5-10 minutes until most of the liquid from the cottage cheese is gone
- Enjoy with some toast and coffee of course!
This might sound disgusting .. but honestly it's AMAZING~ it's the way I prefer my eggs now.
Scrambled Eggs w/ Veggies
- 2 eggs
- 1 tbsp milk (for fluffier eggs, not needed)
- 1/4 cup diced red pepper (any pepper works)
- 1 cup spinach (raw)
- oil/butter for pan
- salt and pepper for taste
- Melt butter in pan on medium heat
- Dice peppers to desired chunks
- Scramble together eggs, milk, peppers, and spinach
- Pour into pan and cook for about 7-10 minutes or until desired. (With these eggs I usually like to cook them a little longer just so that the veggies are more tender)
*If I have onion I usually dice it up to add as well!

THE BEST Banana Smoothie
- 1 banana
- 1 cup milk(almond, 1%, soy.. what ever you like!)
- 1/2 tsp vanilla
- 3-5 ice cubes
- 1/4 tsp lemon juice
- 1/2 cup yogurt
- 1 cup raw spinach
*ALWAYS look at your yogurt ingredients and nutrition label to make sure sugar isn't one of the first ingredients added
*Have strawberries or any other fruit you like?? Add it in!
This is a great way to get some servings of fruits, veggies, AND dairy.. PLUS it's very fast and can be an on-the-go breakfast.
