Delicious and of course.. Nutritious!

So as I try and make the recipe list more condensed here are a few of my favorites!


Breakfast


For my Egg Lovers

Eggs & Cottage Cheese


  • 2 eggs
  • 1/2 cup 1% reduced fat cottage cheese
  • oil/butter for pan
  • salt and pepper for taste
What to do

  1. Melt butter in pan on medium heat
  2. Combine eggs and cottage cheese in a bowl until clumps of cottage cheese are mostly gone
  3. Pour eggs and cottage cheese mixture into pan
  4. Add salt and pepper
  5. Cook for about 5-10 minutes until most of the liquid from the cottage cheese is gone
  6. Enjoy with some toast and coffee of course!
You're getting a lot of protein from the eggs and cottage cheese and also getting about a serving of dairy as well! I usually eat mine with 1-2 slices of whole wheat toast which gives me some fiber and carbs!

This might sound disgusting .. but honestly it's AMAZING~ it's the way I prefer my eggs now.


Scrambled Eggs w/ Veggies

  • 2 eggs
  • 1 tbsp milk (for fluffier eggs, not needed)
  • 1/4 cup diced red pepper (any pepper works)
  • 1 cup spinach (raw)
  • oil/butter for pan
  • salt and pepper for taste
What to do

  1. Melt butter in pan on medium heat
  2. Dice peppers to desired chunks
  3. Scramble together eggs, milk, peppers, and spinach
  4. Pour into pan and cook for about 7-10 minutes or until desired. (With these eggs I usually like to cook them a little longer just so that the veggies are more tender)
This is my go-to if I do not have any cottage cheese and want to add some veggies to start my day!
*If I have onion I usually dice it up to add as well!



For my smoothie friends!


THE BEST Banana Smoothie

  • 1 banana
  • 1 cup milk(almond, 1%, soy.. what ever you like!)
  • 1/2 tsp vanilla 
  • 3-5 ice cubes
  • 1/4 tsp lemon juice
  • 1/2 cup yogurt
  • 1 cup raw spinach
*Add ground flax if you have it on hand for some fiber
*ALWAYS look at your yogurt ingredients and nutrition label to make sure sugar isn't one of the first ingredients added
*Have strawberries or any other fruit you like?? Add it in!

This is a great way to get some servings of fruits, veggies, AND dairy.. PLUS it's very fast and can be an on-the-go breakfast.
